QUESTION: Hello,

I wanna surf from 11 to 25 knots, and I know the basics of surfing, coming from a very big board. I am doubting between a 105, 115 and 125 volume board. I still need to uphaul once and a while, but also wanna be able to surf as long as possible in higher winds once I master the shortboarding... I weigh around 80 kilo's and surf mostly in 11-18 knots conditions a little choppy condition. Sails from 5.2/5.5 to 7.5 Freeride...

How much volume do you suggest?

ANSWER: I would say you will have more board time on a board that is 125 liters. I base this on my friend who is the same weight and he uses his 125 liter in just about everything below 20 knots.  Your sail size is right on for a 125 liter board.

I thought so to, but that would mean that winds higher than 20 knots, I can't surf, and I don't wanna buy a second board yet, budget problems, untill how many knots could I then surf my 125 you think, and wouldn't I plane with 11 knots, a 115 volume (64 cm. wide) and a 7.5 sail?

You can try to use it in more than 20 knots with a 4.5 or 5 sq mtr. sail.  I don't think you would plane with a 115 liter board and a 7.5 sail.  The sail becomes too heavy and helps sink the board. For your weight the best size overall in my opinion if you were only buying 1 board would be to stay around 125 liters.
