Ok, the best schools that teach technical wrestling would be Japan 1 or ZERO 1 nowadays. NJPW teaches this too.

IWW (Irish Whip Wrestling) teaches a version of the UK technical style with a mix of other different types of wrestling. Really, it's more of a "catch as catch can" type of style.

Yes, Japanese schools teach technical style. But it's a different version of that style.

They teach something called "Japanese Strong Style". This is a style with a mix of martial arts, muia tia, holds and submissions. So that is the technical type of world of Japanese style.

Now, the UK one I mentioned above is more like what you would see in the Olympics, known as Greco-Roman. So it deals with throws, submissions, holds, and the catch as catch can style. There is also a mix of boxing for some schools.
