yes, it is allowed to recieve the service with set, also you can defend with set, but your contact with ball must be "normal" (not too long) because if not, the referee will consider it like "long contact" and in that case it will be a point for other team... service can be recieved with one hand, with leg, with head, but the most common and most confident way is with two, closed hands...
