where can i get a book on what size hook is best to use for each different fish there are so many different size hooks

You are correct about all the sizes on hooks, but there are also a lot of designs.

Perhaps one of the best books, is actually a manufacturer's catalog.  I would suggest one from TTI Companies, which is the maker of XPoint, Daiichi and Tru Turn hooks.
