I was just wondering what is the difference between crew and canoeing/kayaking in the olympics?

Hi Zack: The difference is like comparing baseball to football.  Crew is raced on very sleek, very light boats with one to eight rowers pulling long oars while facing the rear of the boat.  The boats are typically steered by a coxswain.

In canoeing, one to two competitors face forward and use shorter paddles to propel the boat.

Kayaking is similar to canoeing, except the oar has two bladed sides.  There is flat water kayaking and white water kayaking, where paddlers traverse a course consisting of rapids.

My recommendation is that you go to youtube and view the differences between the different types of boats and how they race.
