Sail to wind ratio

My name is Moshe, i live in Israel, we have great winds here in Galili lake 18-30mph. I'm beginner+ 3 years experience using JP135. I manage to do waterstart and surt in the straps. my weight is :190lb and i need your help matching the right sail size to the right wind. i have 4.5, 5.5, 6, 7, 8 [m2] sail. please advice. BTW if anyone happend to be in Israel it will be my pleasure to host him and surf together :)

   14         9.5
   16         8.5
   18         7.5
   21         6.5
   23         5.8
   25        5.2
   28          4.8
   30         4.5


These are average sail sizes to wind speed ratios and assume the sailor is reasonably proficient at riding a shortboard. Recommended sail sizes lean towards the smallest that will get you comfortably on a plane, not the biggest that you can hold in the wind. A sail's usable range may extend slightly below and well above these recommendations, especially for skilled riders.
