is a racehorse on 14% food compared to 12 or 10 more prone to be excitable and maybe be more anxious were he may not want to train and go sour

Andy,

The amount of protein that a racehorse gets should be tailored to their individual needs and training schedule.  I have never heard of a 14% feed making a horse excitable and sour.  That sounds more like a training issue.
