Accelleration problem

Question
I have a 1996 Maxum 21' with a Mercruiser 3.0 engine.  I bought the boat used so I don't have the history.  When I am throttling up the engine falters then accelerates.  Cruising speed and top end are fine.  This problem is terrible when pulling a skier.  Idle is also very rough.

It sounds as if you might have a carburetion or linkage problem, which may need an adjustment or more. Best you consult a reliable and qualified marine mechanic to resolve. The cost will likely be worth it.
